"Feeding the Heart of the Community"

“I grew up in Hāwera and moved here to start my first job with Feilding Parks and Reserves. It taught me the value of hard work - like getting up early, putting in the effort, and doing things properly. That’s where I met my first wife. We had a beautiful daughter, and I learned early on the importance of responsibility. A colleague back then taught me something that’s stuck with me my whole life: whatever you do, do it with quality.

Over the years, I worked in different jobs - gardening, care-taking, and eventually farming. I didn’t know much about farming when I started, but I threw myself into it. I went to courses, learned about animal health, crops, fertilizers, and even how to shear sheep. But my real passion was always the cattle. I’d talk to them, and they’d respond. People think animals don’t have personalities, but they do.

I farmed for 26 years, but during the pandemic, I started to feel a shift. I’ve always loved food - producing it, cooking it, sharing it. I had this dream for over 20 years of running a food trailer in The Square, a place where people could come together over good food. It was time to make that dream a reality.

In 2023, I left farming to start my business. It was scary, but exciting. I had to learn everything - compliance, food safety, marketing - but I loved the challenge. By July, my trailer was open, and I was serving the community I care so much about.

The people are what make it worth it. I’m not just cooking food; I’m connecting with people. I think food plays a massive role with connecting a community. Even something as simple as cooking an egg transforms it into nourishment that fuels you. Food is more than just sustenance; it’s a gathering place. It’s where families come together, where you reconnect with friends you haven’t seen in a while. When a customer hasn’t been by in a while and I see them again, I get so excited I could hug them. I’ve even had people thank me for giving them a burger when they were struggling. Moments like that remind me why I do this.

My food is made with love - always. My beef salad is a favourite. It’s got rosemary flakes, walnuts, and a special drizzle. But it’s not just about the food; it’s about making people feel special. I tell my customers, ‘I’m making this with love.’

I love this city and its people - the diversity, the kindness, the resilience. Even when I have food left over, I take it to Zilch to help those in need. I’d rather cook for people who appreciate it than anyone famous. I also volunteer there when I can. It’s about giving back.

Sometimes, I see people walking by looking tired or sad. I wonder about their stories, what they’re going through. I try to smile, to say hello, to make a connection. I believe food is more than just nourishment - it’s a way to bring people together, to show you care.

I’m grateful for this life. I don’t need fancy cars or big houses. What matters to me is seeing the faces of the people I serve, knowing I’ve made their day a little brighter. That’s what fills my heart.”
